Avocado and Eggs Breakfast Delights

Here is one of the healthiest and yummiest breakfast/snack recipes ever - and it includes several great variations. The original recipe and all of the variations are high in protein and healthy fats from the eggs and avocados. Regardless of which way you prepare these breakfast delights, they are all super tasty and super easy to make.

Ingredients

Whole avocado halves
Eggs (preferably organic cage-free eggs)
Cayenne pepper (or any spice of your choice)
Cheese (optional)
Plus other optional ingredients (see the suggested variations below)

(As always, choose organic content and fresh content as much as possible for the healthiest recipe.)

  

Instructions

1. After the pit is removed from your avocados, scoop out a little more avocado to increase the size of the pit's crater.

2. Crack an egg into the crater. Sprinkle with Cayenne pepper (cheese too if you desire).

3. Bake in the oven at 180 degrees until egg is cooked to the level you like.

Variations:

1. Instead of cracking eggs directly in the avocado pit crater, you can put the egg in a cup or small bowl, add your extra ingredients, mix together gently and then pour the mix into avocado all the way to the top of the crater.

2. For a great tasting yet milder version cut some horizontal and vertical slices in the avocado (but not all the way to the skin) and then add a bit of lemon juice, dill weed and Himalayan or sea salt.

3. Use the centers of boiled eggs to make your favorite deviled eggs recipe and use it to fill the craters in raw avocado halves (do not cook the avocado). One easy and super tasty deviled eggs recipe is mustard with a small amount of mayonnaise, and wee amounts of bit of lemon juice and salt. If you like your deviled eggs a bit twangy, add either a small amount of vinegar or a small amount of dill or sour pickle juice.

4. You can also experiment with other ingredients if you like. In addition to a healthy salt and dill weed, try such items as minced garlic, black pepper, minced jalapeño pepper, paprika, etc.
