Crispy Baked Avocado Fries

Yep, another great baked veggie fries recipe. When I saw the previous recipe for Baked Asparagus Fries at the wonderful closetcooking.com recipe site, I also noticed a recipe for Crispy Baked Avocado Fries. Being a fiend for avocados, that definitely got my attention!

Like the other vegetables fries these avocado fries are super simple to make, you pretty much just need to slice up the avocados, dredge them in flour, dip them in egg and panko and then bake them until nice and golden brown and crispy and good! In total they take less than a half an hour to make so you can easily make them whenever you have a craving for fries or avocados!

You might be a little surprised to learn that avocados work really well when cooked or baked and they are especially nice in these fries coated with the crispy panko bread crumbs! Suggestion: For a true avocado treat, choose the avocado ranch dressing to serve with these "fries".

Ingredients:

2 large avocados, sliced
Himalayan or sea salt, pepper and cayenne to taste
1/2 cup gluten-free flour
1 egg, lightly beaten (preferably cage-free organic)
1 cup panko bread crumbs (use gluten-free panko type crumbs for the healthiest recipe.
1/4 cup ranch dressing*
1 chipotle chili in adobo, chopped

*Use one of the following recipes for a tasty healthier ranch dressing:

Real Ranch Dressing

(As always, The Best Years in Life recommends choosing organic content and fresh content as much as possible for the healthiest recipe. Also, wash all fruits and vegetables before cutting or adding to the recipe.)

  

Directions:

1. Season the avocado slices with salt, pepper and cayenne to taste, dredge them in flour, dip them in egg and then panko breadcrumbs.

2. Place the avocado slices in a single layer on a wire rack on a baking sheet and bake in a preheated 425F oven until golden brown, about 15-20 minutes.

3. Serve with the mixture of ranch and chipotle dressing.

Serves 4

Per serving: Calories 354, Fat 22g (Saturated 3g, Trans 0), Cholesterol 41mg, Sodium 373mg, Carbs 27g (Fiber 8g, Sugars 3g), Protein 8g
