Baked Avocado Fries with Spicy Garlic Sour Cream Dip

What a great tasting and healthy appetizer! This recipe is so delicious that you may want to double it, especially if you have guests - because chances are that EVERYONE will be asking for seconds.

Ingredients

Avocado Fries:

1 avocado, sliced into 12 'fry' lengths
1/2 cup or more all-purpose flour (choose coconut flour or other gluten free flour for a gluten-free recipe)
1 egg, beaten (preferably cage-free organic)
1/2 cup dry bread crumbs (use gluten-free Panko crumbs or make your own for a gluten-free recipe)*
2 tablespoons grated Parmesan cheese, or as needed

Dip:

3 tablespoons sour cream
2 tablespoons garlic powder
1 tablespoon tomatillo salsa
1 dash chile-garlic sauce (such as Sriracha®), or more to taste

*For a gluten free recipe, choose gluten-free bread crumbs or else make your own savory bread crumbs with this recipe:

Savory Gluten Free Waffles (Use these to make gluten free bread crumbs)

Instructions

1. Preheat oven to 450 degrees F (230 degrees C).

2. Pour flour into a shallow bowl. Pour egg in another shallow bowl. Pour bread crumbs into a third bowl.

3. Gently press the avocado slices into flour to coat and shake off any excess flour. Dip into beaten egg and press into bread crumbs.

4. Place breaded avocado slices onto a baking sheet. Sprinkle grated Parmesan cheese over breaded avocado slices.

5. Bake avocado in the preheated oven until cheese is melted and 'fries' are golden brown, about 10 minutes.

6. Stir sour cream, garlic powder, tomatillo salsa, and chile-garlic sauce together in a bowl until thoroughly mixed.

Note: This recipe also works very well with ranch dressing or bleu cheese dips.

Makes 12 Fries.
