Barbeque Tempeh Sandwiches
Here is a meatless BBQ sandwich which has gotten rave reviews which uses tempeh. Besides tempeh being a healthier fermented soy product (which ordinary tofu is not), people who are not fond of the taste of tofu may find tempeh to be right up their culinary alley. While any favorite BBQ sauce may be used, this would be a really good recipe to use with our homemade "Mouth Watering BBQ Sauce". Note: You can also use this recipe without the buns and top a bed of rice or quinoa.
1 cup barbecue sauce, your choice
To make your own "Mouth Watering BBQ Sauce":
(As always, for the very healthiest versions of any recipe choose organic content as much as possible.)
Instructions1. Pour the barbeque sauce into a medium bowl. Crumble the tempeh into the sauce, and let it marinate a little, about 10 minutes.
2. Heat oil in a skillet over medium heat. Add the red and green peppers, and the onion. Cook, stirring frequently until tender. Stir in the tempeh and barbeque sauce, and heat through.
3. Spoon the tempeh mixture onto Kaiser rolls, and serve.
Makes 4 servings.
Per serving: 375 calories, 11.5g fat, cholesterol 0 g.
