Healthy Carob (or Dark Chocolate) Fudge

Here is a easy to make, healthy, no sugar, non-dairy and gluten free recipe for fudge you can snack on or have as dessert without feeling guilty.  The fudge is naturally sweetened by the dates, has a nutty flavor from the almonds as well as a chocolate flavor from the carob or dark chocolate.

Ingredients

100g dark organic carob chocolate (or organic dark cocoa)
20 pitted dates
Handful raisins
2 Handfuls almonds
Few drops pure vanilla extract
Sprinkle sunflower seeds
Coconut oil to grease (optional, low flavor extra light virgin olive oil or peanut oil)

Directions

Chop 15 dates and blend them into a mushy ball in your food processor, then put aside until later.

Chop up your other five dates and almond nuts and place them into a bowl along with the raisins.

Put a small pan of water on a medium heat, place a small bowl over the top of the pan.  Do not fill the pan with too much water.

Break your chocolate into pieces if need be and place into the small bowl to melt for your chocolate fudge.  Once melted add the vanilla to the bowl.

Stir your blended up dates into the chocolate, it will look a little lumpy. Add it straight to the bowl containing the nuts and raisins, mix well.

Take a small glass or ceramic pan/container and lightly grease it.  Pour the chocolate fudge mixture into it, spread evenly and press the mixture in firmly with the back of a spoon or small spatula.

Sprinkle with sunflower seeds, cover with plastic wrap and place in the refrigerator for an hour.  Once cooled the healthy chocolate fudge can be cut into squares and should come easily out of the container.  Alternately, you can take out the entire slab of fudge, cut it into small squares and keep wrapped or in a container in the refrigerator.
