Crock Pot Low Carb Un-Stuffed Cabbage Roll Soup

(The Best Years in Life) Are you a cabbage fan? Even if you aren’t, this recipe might just win you over. One of the most comforting meals on a cold winter’s day, it is also great any time of the year - a comforting, hearty, but low carb meal you can make any weeknight by cooking it in a crock pot or letting it simmer on a stove.


2 lbs Ground beef (preferably grass fed organic)
1/2 head Cauliflower or 2 cups riced cauliflower
2 Garlic cloves
1/2 tsp Oregano, dried
1 tsp Parsley, dried
1/2 cup leeks
5 cups Beef broth, low sodium
16 oz Marinara sauce - low carb/low sugar
1 tsp Pepper
1 tsp pink Himalayan or Kosher salt
2 tbsp extra virgin olive oil
1 Large cabbage or 8 cups sliced
1/2 cup Chopped leeks

(As always, The Best Years in Life recommends choosing organic content and fresh content as much as possible for the healthiest recipe. Also, wash all fruits and vegetables before cutting or adding to the recipe.)



1. Heat olive oil and garlic on medium high heat.

2. Add leeks and cook until softened.

3. Add ground beef and cook until browned and no longer pink.

4. Add seasonings to beef and marinara sauce.

5. Add the riced cauliflower to the beef mixture and stir until coated.

6. Pour the beef into the crock pot.

7. Pour beef broth into crock pot and add cabbage.

8. Stir to combine everything.

9. Cook on high 3hours or low 6 hours. If you don't have a crock pot, simply cook ground beef in a dutch oven or heavy soup pot, follow recipe and simmer on low, covered for about an hour until cabbage is tender.
