Edamame and Quinoa Collard Wraps with Sweet Ginger Dressing

This meat, gluten and dairy free recipe is not only delicious, it is also loaded with great ingredients and is super healthy. Enjoy a couple for a complete healthy meal or grab one as a healthy pick-me-up after a workout, jog or brisk walk.

A few words of caution: Edamame, which is a favorite in China, is nevertheless green soybeans. As long as it is non-GMO soy, it should be OK to eat once in awhile unless you have an allergy to soy or breast cancer.


For the Wrap:

2-3 large collard leaves
1/4 cup grated carrot
1/4 cup sliced cucumber
1/4 red bell pepper, chopped into thin strips
1/4 orange bell pepper, chopped into thin strips
1/3 cup cooked quinoa
1/3 cup shelled defrosted edamame

For the Dressing (you will have lots of leftovers):

Fresh ginger root, about 3 tbsp, peeled and chopped
1 cup cooked chickpeas
1 large clove of garlic
4 tbsp rice vinegar
2 tbsp low sodium soy sauce* or tamari
2 tbsp lime juice
1/4 cup water
a few pinches of chili flakes
a pinch of coconut sugar or a dab of raw organic honey

Healthy Soy Sauce Substitutes

(As always, The Best Years in Life recommends choosing organic content and fresh content as much as possible for the healthiest recipe. Also, wash all fruits and vegetables before cutting or adding to the recipe.)



1. Mince the garlic clove and then whisk it and the other dressing ingredients together in a medium sized bowl and set aside.

2. Place the desired amount of wrap ingredients on to of the collard green wraps.

3. Drizzle some of the dressing on top of the items in the collard green wraps.

4. Fold and tuck the wraps and enjoy - or keep in the fridge for up to a day or so in a covered container.

5. The leftover dressing can be kept for up to three days in a covered container in the fridge.
