Egg, Hash Browns and Mushroom Breakfast Muffins

This is a really easy dish to prepare, and it looks so darn cute! It is also a great dish to serve on a buffet table because each serving is completely self-contained and can just be picked up and popped on a plate.  Note: If you prefer, you can substitute some chopped bits of organic meat (such as organic ham or organic bacon) for the mushrooms, but trust us - you won't miss a thing in the taste department with the meatless version.

Ingredients

1 20 ounce package pre-shredded hash brown-style potatoes (or better still, shred your own)
2 large eggs, lightly beaten (preferably organic cage-free eggs)
4 tablespoons non-bleached whole wheat flour (or even better, coconut flour)
1 small sweet onion, coarsely grated
1 cup of chopped bits of a healthy mushroom such as portabello or shitake
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Himalayan or sea salt and freshly ground black pepper to taste
1 dozen eggs, scrambled* (preferably organic cage-free eggs)
chives for garnish

(As always, The Best Years in Life recommends choosing organic content and fresh content as much as possible for the healthiest recipe. Also, wash all fruits and vegetables before cutting or adding to the recipe.)

Instructions

1. Preheat the oven to 400 degrees F., and lightly coat a 12-cup muffin tin with extra virgin olive oil or other healthy oil.

2. Mix the first eight ingredients together in a large bowl. Spoon potato mixture into each prepared muffin cup until about 1/3 full. Gently press the potato mixture down in the middle and up the sides of each cup.

3. Bake until golden brown, about 25-30 minutes. If the nests have puffed up too much in the center, scoop out a little with a teaspoon.

4. Spoon a few tablespoons of scramble eggs into each nest and top with chives.

Options:

Add in some healthy chopped veggies, such as broccoli, squash or zucchini.

Top with a small dollop of low-fat sour cream.
