Scrambled Egg, Tomato, Mozzarella and Basil Sandwich
Make your own healthy breakfast sandwich with scrambled eggs, tomato, mozzarella cheese and basil on whole wheat or whole grain toast. This recipe is an excellent source of protein, calcium and choline, and a good source of fiber, Vitamin A, folate and iron.
2 eggs (preferably organic cage free eggs)
(As always, for the very healthiest versions of any recipe choose organic content as much as possible.)
1. Combine eggs, milk, salt and
pepper in a bowl. Health hint: Eggs are
healthiest when beaten the least.
Break the egg yolk with a fork and only
stir it lightly for a bit. Whipping,
beating and over-scrambling oxidizes the
proteins in the egg yolk and negatively
impacts cholesterol content.
