Delicious Gluten-Free Spiced Carrot Cake
A TBYIL Original Recipe for Muffins or Cake

(The Best Years in Life) On a recent visit to our local health food store I picked up a box of gluten free spiced cake mix and decided to jazz it up a bit and turn it into a carrot cake that was as healthy and tasty as possible , including going as organic as possible. The end result was a 9-inch iced cake and a dozen iced muffins that were absolutely delicious! One of the tastiest things I have ever made.

Ingredients:

Here are the ingredients I used. In some instances I cannot give you the exact amounts as I just guesstimated and used what seemed about right to me as I often do.

Muffins and Cake

One box of gluten free spiced cake mix
5 small organic eggs (3 green shell and 2 brown shell)*
2/3 cup of melted organic coconut oil
Additional coconut oil to lightly coat cake and muffin pans
3/4 cup of spring water
1 large shredded carrot
Handful of raisins
Handful of finely chopped almond slices

*Note the recipe calls for 4 eggs, but mine were on the small side

Icing

Coconut oil
Organic confectioners coconut sugar**
Organic raw honey
A bit of organic maple syrup
Sweetened condensed milk***
A splash of lemon juice

**I made regular organic coconut sugar into fine confectioners sugar by processing it thoroughly in a coffee grinder set on the finest grind setting

***I cheated with this ingredient and used store-bought sweetened condensed milk. If you want, you can make your own healthier sweetened condensed milk with this recipe:

Homemade Sweetened Condensed Milk

(As always, The Best Years in Life recommends choosing organic content and fresh content as much as possible for the healthiest recipe. Also, wash all fruits and vegetables before cutting or adding to the recipe.)

 

Instructions

Here is how I made my muffins and caket:

1. First I heated the oven to 350 degrees and then made the icing by melting the coconut oil and the solid Eco Bee honey we use and then combining all the ingredients together in a small bowl and placing it in the freeze to help it solidify - taking it out a few times to stir as it solidifies while the cake is being made and cooked.

2. Next, I combined the coconut oil, water and eggs and lightly whipped them in the blender with a few pulses on low speed. Then, in a medium large bowl I added the ingredients from the blender to the cake mix along with the shredded carrot, finely chopped almond slices and raisins and thorougly combined all the ingredients.

3. The next step was pouring the cake mix into lightlly oiled 12-count muffing pan, stopping about 1/4 inch short of filling the cups. Note: as an alternative you can use muffin cups such as those pictured. Then the rest of the cake mix went into a lightly oiled cake pan (I used a Pyrex type glass pan). The muffins take about 20-25 minutes to bake and the cake about 25-30. Both are done when you can insert a toothpick or knife into the middle and have it come out clean.

4. I finished off the muffins and cake with the icing mix - which I actually applied right before serving to keep it from melting too much.

The result, as I said earlier: Absolutely delicious!
