Savory Gluten Free Olive Bread

This colorful, delicious and super healthy gluten free bread is very rich and very dense and literally packed with veggies.  With briney olives and roasted peppers, the flavors are wonderfully tangy without being too overwhelming. Spinach gives the bread a bit of earthiness and there is also a hint of sweetness from the dough itself. A great accompaniment for chowders, soups, stews and other dishes, some may even want to use it as a very hearty breakfast bread (and a great way to sneak in some early morning veggies). Additionally, this bread recipe should translate wonderfully into muffins or mini loaves, perfect for freezing.

Ingredients

1 1/2 cups coconut flour or all purpose gluten free flour*
2 teaspoons aluminum free baking powder**
1/2 teaspoon Himalayan or sea salt
8 eggs*
1/4 cup extra virgin olive oil
1 garlic clove, minced
3 1/2 cups thinly sliced baby spinach
2 large halves of jarred roasted red peppers, chopped
1 heaping cup Kalamata or similar olives, chopped
1/2 teaspoon pepper
1/2 cup (heaping) grated parmesan cheese

*If you use all purpose flour instead of coconut flour, use only 6 eggs

Aluminum-Free Homemade Baking Powder

(As always, The Best Years in Life recommends choosing organic content and fresh content as much as possible for the healthiest recipe. Also, wash all fruits and vegetables before cutting or adding to the recipe.)

  

Directions:

1. Preheat oven to 400 degrees.

2. Whisk together the flour, baking powder and salt in a small bowl and set aside.

3. In another large bowl, beat the eggs; whisk in the olive oil, then stir in the garlic and spinach. Add the flour mixture and stir until combined. Fold in the red peppers, olives, black pepper and cheese.

4. Pour the batter into a greased loaf pan and bake for about 45-50 minutes, until the bread is golden and a skewer inserted into the middle comes out clean. Let cool in the pan for about 10 minutes then continue cooling on a wire rack.
