Golden Squash, Pepper, and Tomato Gratin Casserole

Fresh summer vegetables, fragrant basil, and savory Parmesan come together beautifully in this brilliant, healthy and unbelievably tasty casserole dish.


3 tablespoons extra virgin olive oil
1 medium red onion, finely chopped
2 cloves garlic
2 golden squash, yellow squash, or zucchini, cut into 1/4-inch-thick rounds
1 red bell pepper, cut into 1-inch squares
3/4 teaspoons Himalayan, sea or kosher salt
1/4 cup finely chopped fresh basil leaves
1/2 cup grated Parmesan cheese
2 tablespoons) grated Parmesan cheese
1 pound tomatoes, cored and thickly sliced
1/2 cup panko bread crumbs*

(As always, choose organic content and fresh content as much as possible for the healthiest recipe.)



1. Start with the chicken. Sautee a garlic salt and pepper-seasoned chicken breasts. Chop the chicken up then place it on a bed of crunchy romaine lettuce.

2. Add juicy cherry tomatoes that have been cut in half.

3. Add fresh mozzarella. You could chop up a ball of mozz or go the super-easy route and buy these precious fresh mozzarella “pearls”. Love ‘em!

4. Now add chopped avocado

5. Finally, add tons of fresh torn basil, and a extra heavy drizzle of reduced balsamic vinegar on top, which will act like salad dressing.
