Grill Some Omega-3

Grilled Ginger Tuna
Get adventurous this grilling season and replace those summer steaks with something a little more beneficial: tuna steaks. The healthy omega-3 fatty acids found in tuna and other seafood can help protect against heart disease. Omega-3s may also reduce arrhythmias, decrease clots, lower blood triglycerides and decrease inflammation that can lead to cancer. The tangy ginger rub marinade will make you forget all about those old beefsteaks.

Grilled Ginger Tuna

  • 1 lb. fresh tuna, boneless and skinless
  • 1 tsp. olive oil
  • 1 tsp. grated, peeled fresh ginger
  • 1 small jalapeno chili, seeded and minced or 1/4 tsp. dried red pepper flakes
  • 1/4 tsp. sea salt
  • Freshly ground black pepper, to taste
  • 1 Tbsp. freshly squeezed lime juice

Prepare barbecue grill to medium-high or preheat broiler to high.

Cut tuna into 16 equally sized cubes and place in bowl. Add canola oil and toss fish to coat. Add ginger, jalapeno chili, salt, pepper and lime juice. Toss and mix well. Cover and refrigerate 20 to 30 minutes.

To grill, divide tuna cubes evenly among 4 skewers. Grill 4 to 5 minutes, turning frequently. Fish is done when cooked just through and inside is no longer pink.

To broil, arrange marinated fish in shallow pan so pieces do not touch. Place fish 4 inches below broiler for 3 minutes. Turn each cube. Broil 1 to 2 more minutes, until fish is just cooked through and inside is no longer pink.

Serve immediately, with fruit or salsa.

Makes 4 servings.

Per serving: 134 calories, 2 g. fat (less than 1 g. saturated fat), 0 g. carbohydrate,
27 g. protein, 0 g. dietary fiber, 187 mg. sodium.
