Homemade Sour Cream
Have you ever checked the label on store bought sour cream? Chances are
that it contains a list of ingredients such as: cultured cream, grade A
whey, modified food starch, sodium phosphate, sodium citrate, guar gum,
carageenan, calcium sulfate, potassium sorbate (preservative) and locust bean
Try this healthy low fat substitute in place of store bought sour cream on potatoes, dips, beans, vegetables, fruit, tortillas, etc.
1. Place all ingredients in a blender, and combine on medium-high speed until smooth and creamy. Serve with Tropical Fruit Compote or any recipe that uses sour cream.
Yield: 8 servings
Serving size: 2 1/2 tablespoons
Note, for a healthier version that contains a bit more calories and healthy fat, use raw organic goat milk instead of cow milk. Better, still also use goat milk quark instead of cottage cheese. You can find the recipe for making goat milk quark at:
