Refreshing Melon Salad
With summertime comes plenty of fresh melons. Mix up an easy and refreshing summer favorite in the form of fruit salad, made with a bounty of cool and healthy melons. Cantaloupe and honeydew are excellent sources of vitamin C while watermelon provides ample amounts of vitamins A, C, and the beneficial phytochemical, lycopene. Watermelons are also excellent for kidney health.
(As always, for the very healthiest versions of any recipe choose organic content as much as possible.)
1. Seed the melons and either use a melon baller to cut out bite-sized balls of each melon or else cut into bite-sized pieces. Arrange them on a platter or 6 salad plates.
2. Sprinkle with the feta and chopped mint. Season with lime juice and, if desired, a pinch of salt and pepper to taste. If using, garnish with sprigs of mint.
Makes 6 servings.
Per serving: 69 calories, 2 g. total fat (1 g. saturated fat), 13 g. carbohydrate, 2 g. protein, 1 g. dietary fiber, 82 mg. sodium.
