Mini Breakfast Pot Pies

This recipe is a snap to make and is super delicious too. You can use this same idea to make mini pot pies for any meal, but in this version I choose to add a couple of eggs to make breakfast pot pies. Make your own biscuits with coconut flour from the recipe link inside this one for an even healthier version

Ingredients

12 medium to large biscuits*
1 can Progresso Chicken Pot Pie Soup
2 eggs (preferably organic cage free)
Shredded sharp cheddar cheese
Parmesan cheese
Extra virgin olive oil to coat muffin baking dish
Flour to coat biscuits (use coconut flour for a gluten-free recipe)
Optional: hot sauce, minced garlic

Delicious Gluten-Free Homemade Biscuits

(As always, The Best Years in Life recommends choosing organic content and fresh content as much as possible for the healthiest recipe. Also, wash all fruits and vegetables before cutting or adding to the recipe.)

  

Instructions

1. Heat the oven to 400 degrees.

2. Lightly coat the muffin baking dish with the olive oil.

3. LIghtly whip the eggs in a small bowl and then add the Chicken Pot Pie Soup

4. Sprinkle ample flour in a shallow pan and then coat each side of the biscuits before flatenning them with a rolling pin or by hand until they spread to about 5 inches in diameter.

5. Form a biscuit cup in each muffin hole by taking each biscuit and pressing it into the bottom and up along the sides of the hole.

6. Pour the eggs and soup mixture until it almost reaches the top of the biscuit cup. Sprinkle on cheddar cheese and then a dusting of Parmesan.

7. Place the muffin tray in the oven and cook until the biscuits are done.

8. Serve and enjoy!

Note: Leftovers may be placed in a Ziplock type bag and saved for up to two days in the fridge or two weeks in the freezer to be reheated later.

Portobello Burgers

Yields 12 mini-burgers

Per serving: 380 calories, 14 g. total fat , 28 g. carbohydrate, 12 g. protein, 5 g. dietary fiber, 440 mg. sodium.
