Oven Baked Parmesan Zucchini Chips

Next time you want to enjoy chips, try this recipe from Metabolic Cookbook which features zucchini slices, parmesan cheese, healthier bread crumbs, spices and other items to give you delicious, healthier chips that are sure to please any chip and snack lover. Includes directions for making your own savory gluten-free bread crumbs.

Ingredients

1 (large) zucchini, cut into 1/8" - 1/4" slices
1/3 cup whole grain breadcrumbs, optional Panko
1/4 cup finely grated parmesan cheese, reduced fat
1/4 teaspoon black pepper
Kosher or sea salt to taste
1/8 teaspoon garlic powder
1/8 teaspoon cayenne pepper
3 tablespoons low-fat milk

Directions:

1. Thinly slice the zucchini with a mandolin slicer.

2. Mix all dry ingredients together, except zucchini.

3. Dip slices in the milk then dump them into a gallon size bag filled with the dry seasoning, shake to coat, dump onto a cookie sheet, bake at 425F until crispy brown

Yields: 4 servings. 99 calories per serving

To Make Your Own Savory Gluten-Free Bread Crumbs:

1. Toast 2 or 3 gluten-free plain waffles and break them apart; then process them a food processor, pulsing on and off until they resemble classic breadcrumbs (not too fine).

2. Add in several dashes of dried Italian herb mix, or a simple combo of dried basil, parsley and marjoram.

3. Drizzle in some high quality extra virgin olive oil as you pulse - just until they are moist and begin to stick together a bit.

4. To make a classic pan-fried crumb topping, pour a tablespoon or so of good olive oil in a medium- not too hot- skillet and toss in the processed waffle crumbs. Add dried Italian herbs to taste and stir, shake the pan and brown them for a minute, then add the crumbs to the recipe.
