Paleo Baked Crispy Buffalo Wings

(The Best Years in Life) When it comes to a tasty, crowd-pleasing treat for big football games, campouts, picnics or just about any occasion, good buffalo wings are hard to beat. And these crispy baked paleo buffalo wings are not just good, they are some of the very best. Not only are they crispy without frying, they are also delicious as well as paleo healthy. Gluten-free, grain-free, egg free and dairy free, they will stack up against the best fried buffalo wings to be found anywhere - and likely come out on top!

Like barbecue, a big key to great buffalo wings is the sauce and this recipe has a great one. It’s an intoxicating mix of spicy, savory and buttery with just a hint of vinegar and garlic - and you can adjust the "heat" to suit your preference. And then there’s the creamy dressing for dunking. Oh my. You and your family members and guests will truly be smacking your lips and asking for seconds. And thirds and . . .

The secret to making crispy buffalo wings without frying is baking powder. Just open the thawed package of buffalo wings, pat them dry and toss with baking powder immediately before baking. If you want super crispy wings, plan ahead and toss them in the baking powder and placing them in the fridge for 8-12 hours on the baking sheet with rack.

Note that for paleo purists, baking powder is not technically compliant if it contains corn starch. No problem simply make your own baking powder with 1 tsp. of baking soda and 2 tsp. of cream of tartar and substitute it for the 1 tbsp. of baking powder in the recipe. If you do choose commercial baking soda, make sure it is aluminum-free. Otherwise, use the substitute.

For the Wings

3 lbs. chicken wings, (About 36 pieces of flats and drummies; thawed if frozen, then drained and patted dry)
1 Tbsp. aluminum-free baking powder (or the substitute recommended above)
1 tsp. pink Himalayan salt (or sea salt)

For the Sauce

1/3 cup ghee* or coconut oil (or butter, for non-purists)
1/2 cup hot sauce (such as Frank’s Red Hot or Horsetooth)
1 Tbsp. apple cider vinegar (preferabl organic, such as Braggs)
1 tsp. garlic powder
1/2 tsp. paprika
Pinch of cayenne pepper (optional; adds more heat)
1/2 tsp. sea salt

*Use ghee if at all possible. It's what makes this sauce really special.

Note: Non-purists can also choose to make their sauce by simply combining a top quality hot sauce with butter (1 stick of butter per cup of hot sauce). In one taste test, the top three hot sauces for making buffalo sauce were: Frank's Red Hot Original Sauce, Texas Pete Hot Sauce, and Crystal Hot Sauce

Instructions:

1. Preheat oven to 250℉. Line a large rimmed baking sheet with foil. Place a baking/cooling rack on the baking sheet and set aside.

2. Place chicken wing parts in a large bowl. Sprinkle with baking powder and sea salt. Toss well to coat.

3. Arrange chicken on the baking/cooking rack in a single layer so that pieces are not touching one another (use a second pan with rack, if needed).

4. Place pan in oven and cook chicken for 30 minutes.

5. After 30 minutes, turn the oven temperature to 425℉ and continue cooking for another 20 minutes.

6. After 20 minutes, rotate the pan and cook an additional 20 minutes or until chicken is crispy and lightly browned.

7. While the chicken is baking, prepare the sauce by combining all of the sauce ingredients in a small saucepan over medium heat. Once ghee is melted, whisk to combine and remove from heat.

8. Transfer cooked chicken pieces to a shallow container (such as a 9×13-inch pan) and drizzle with ½ of Buffalo sauce. Toss to coat.

9. Serve remaining sauce with wings or save for another use. May also serve with Homemade Paleo Ranch Dressing for extra dipping pleasure.

Tasty Tip: Non-purists can opt for some bleu-cheese dressing to really put these wings over the top!
