Pistachio-Crusted Salmon

Turn any night into a special occasion with this 20-minute healthy and delicious meal inspired by a Parisian bistro.  Dijon mustard (which you can make yourself with linked recipe) and the unique taste of pistachio nuts make this a real taste bud pleaser!

Ingredients

4 3-ounce salmon fillets (preferably wild caught Atlantic)
1 T Dijon mustard*
1/4 cup breadcrumbs (preferably healthier whole wheat or gluten-free)
1/2 oz pistachios, shelled (about 25)
1 clove garlic, minced
1 shallot, minced
Extra virgin olive oil to coat baking sheet
HImalayan or sea salt and pepper to taste

*Make your own tasty and healthier Dijon mustard with this recipe:

Homemade Dijon Mustard

(As always, The Best Years in Life recommends choosing organic content and fresh content as much as possible for the healthiest recipe. Also, wash all fruits and vegetables before cutting or adding to the recipe.)

  

Directions:

1. Preheat oven to 425 degrees. In a food processor or with a knife, chop pistachios until they are about the size of the bread crumbs. Mix with breadcrumbs, minced garlic and minced shallots and place on a deep plate.

2. Season fish with salt and pepper. Spread mustard evenly over one side of fillets, then press salmon into mixture on that same side.

3. Place on baking sheet coated lightly with the olive oil. Bake 10 minutes, or until top is browned and fish is cooked through.

Note: You can also make this recipe with almonds (sliced or chopped) or other healthy nuts.

Makes 4 servings.
