Quinoa Chicken Cherry Salad

Take a break from the same old brown rice, barley and pasta with quinoa - a versatile, gluten-free healthy grain substitute which is super easy to prepare and quicker than rice or barley to cook as well. In this recipe featuring quinoa, you have a super tasty and healthy salad which includes ingredients such as scallions, chicken breast, garlic, olive oil, cherries, almonds and more.


1/2 c. cooked Quinoa
2 oz. cooked chicken breast (preferably organic)
1 scallion chopped
1/2 tbsp. toasted almond slices
1 tbsp. dried cherries
1/2 tbsp. extra virgin olive oil
1/2 tbsp. lemon juice
1 tsp. garlic, minced
1 tsp. fresh parsley
Himalayan or sea salt and freshly ground pepper to taste

(As always, The Best Years in Life recommends choosing organic content and fresh content as much as possible for the healthiest recipe. Also, wash all fruits and vegetables before cutting or adding to the recipe.)



Preparing the Quinoa

1. If you have never prepared it before it may seem a bit scary, but really its so simple. Rinse the quinoa in a colander before using. There may be some dark pieces you can simply pick out.

2. Place the 1 cup quinoa in a pot with 2 cups of water. Bring it to a boil then reduce to simmer. Cover and cook 15 minutes till all the water is gone. You don't have to drain anything!

Preparing the Salad

1. Mix the oil, lemon juice, garlic, salt and pepper and pour onto the quinoa, combine well.

2. Add toppings!
