Raw Chocolate Caramel Cups

Chocolate lovers rejoice! These chocolate caramel cups are irresistibly delicious and much healthier than commercial desserts. Raw Caramel is much healthier than the commercial kind and it it doesn't use any sugar. The cacao is high in anti oxidant's and magnesium. The only worry will be keeping yourself from having too many, as they are a bit high on calories. Both adults and kids are sure to love, love, love these great looking and great tasting dessert cups!

Ingredients:

Chocolate Base

2 cups of coconut flour (or almond flour)
8 dates
2 tbsp melted coconut oil
1 tbsp honey (preferably raw organic)
4 tbsp of cacao powder

Salted Caramel

1 cup of dates pre-soaked for two hours in water
1/4 cup of honey (preferably raw organic)
1/4 cup of melted coconut oil
pinch of Himalayan or sea salt
1 tbsp of almond butter

Chocolate Garnash

1/2 cup of cacao powder
1/2 cup of cacao butter
1/4 cup of honey (preferably raw organic)
4 dates pre-soaked
pinch of Himalayan or sea salt.

(As always, The Best Years in Life recommends choosing organic content and fresh content as much as possible for the healthiest recipe. Also, wash all fruits and vegetables before cutting or adding to the recipe.)

  

Directions:

Chocolate Base

1. Blend until a dough forms and press into your molds (such as a muffin tin)

2. Now freeze the bases overnight or for six hours minimum.

Salted Caramel

1. Remove bases and using a warm knife gently remove from the tins and place on a tray. They should be well formed and stable.

2. Blend all dates ingredients until a paste forms. thick , gooey and creamy! Spoon the mixture evenly into all six and place in the refrigerator.

Chocolate Garnash

1. Melt the cacao butter and then blend all ingredients and pour over each caramel treat evenly.

2. Place in the refrigerator until set. You can store in the freezer or the refrigertator.

3. The chocolate ganash is also a simple dessert recipe on its own. Add some nuts and throw it the the cooler to set for a simple chocolate dessert recipe.

Makes 6 cups
