Raw Coconut Cream Tart

Fall and winter, especially around the holidays, are usually the season for all things pumpkin, apples, pears, and spice. Here is a delicious option which uses super healthy coconut and no added sugar to make a raw coconut tart. Note that you can easily modify the recipe with key lime juice to make a key lime tart, or perhaps substitute some bananas for some of the coconut to have a banana coconut tart.



1 cup almonds
1/3 cup sunflower seeds
1 1/4 cup shredded coconut
1 cup packed raisins
1/2 teaspoon pure vanilla extract
1/8 teaspoon Himalayan or sea salt
1- 2 teaspoons water


2/3 cup packed young coconut pulp
2/3 cup cashews
1/2 cup coconut water
1/4 cup coconut nectar
3/4 teaspoon pure vanilla extract
Pinch of Himalayan or sea salt
1/3 cup melted coconut oil
4 tablespoons melted coconut butter
Few drops stevia or some raw honey, if needed

(As always, The Best Years in Life recommends choosing organic content and fresh content as much as possible for the healthiest recipe. Also, wash all fruits and vegetables before cutting or adding to the recipe.)




1. Grind the almonds and sunflower seeds down to flour in a food processor.

2. Add the coconut, salt and raisins. Grind until completely broken down.

3. Add the water and vanilla, starting with 1 teaspoon water.

4. Process until the mixture forms a dough that will hold together. Add more water if needed.

5. Press into and up the sides of a 9" tart pan with removable bottom.


1. In a high speed blender combine the coconut pulp, cashews, coconut water, nectar, vanilla and salt. Blend until smooth and cashews are broken down.

2. Add the oil and butter. Blend to incorporate.

3. Taste and add a few drops stevia if needed.

4. Pour the filling into the crust.

5. Set in the fridge for 12 hours before serving or in the freezer for part of the time.

Options: Add some key lime juice in place of some of the coconut water for a coconut key lime tart or add some bananas in place of some of the raw coconut to have a coconut banana tart.

Makes one 9 inch tart.
