Raw Vegan Durian Split with Orange Sauce

Think of this creation as a deluxe raw vegan version of a banana split, with the durian fruit as the base which would normally be ice cream. The durian fruit is often referred to as "the King of Fruits" by the Thai people and can be difficult to obtain because it is quite pungent and some carriers refuse to allow it. If you are fortunate enough to have access to a Thai market or other source of Durian fruit, here is a recipe Chef Barry is a food artist and I think you will agree that this recipe is as visually stunning and healthy as it is delicious.


Ingredients for Chef Barry Gourmet's Durian Split:

One section of whole durian fruit.
One whole lime
half or a quarter whole lemon
One Juicing of Mandarin Orange
One teaspoon of spirulina powder
Half a teaspoon of bee pollen (Natures original multivitamin and mineral supplement )
I level teaspoon of dry coconut flakes.
A table spoon of fresh whole blue berries.
A teaspoon of dry presoaked Goji Berries.

Ingredients for the Orange Sauce:

One slice of fresh pineapple one inch thick.
One ripe banana.
One table spoon of dry presoaked goji berries .
One whole orange
Pure filtered water on the side


Method for making the Orange Sauce:

1. Add all your chopped ingredients except for the banana to your blender or food processor.

2. Add some pure filtered water to the level of the ingredients and blend.

3. Pour this sauce into a mixing bowel then slice the ripe banana into the bowl and stir.

4. Put aside and now for creating your Durian Split.

Method for making your Durian Split:

1. Lay your ripe Durian section across your glass boat length wise and marvel at it. “Only a Durian Lover such as myself will understand this moment,” says Chef Barry.

2. Next peal off the skins and layer your orange quarters around your beloved Durian like she is the center peace of this recipe.

3. Then gently pore your Orange Sauce in a zig zag pattern across the Durian and oranges until the liquid surounds this tropical island like a mote.

4. Finally sprinkle the following in this order. “Your blueberries, presoaked Goji Berries,small pieces of chopped lemon including the rind ,Spirulina powder,bee pollen and dry coconut flakes.

5. Chill this Tropical Delight in your freezer for 5 minutes then take it out and garnish with 4 fresh lime quarters and serve . You're done!

When finished eating there will be 2 large egg size Durian seeds left on your plate.

Please do not throw them out as they are very edible and nutritious for you.

Simply steam, or boil them until tender and add them to your other recipes.

Or you can place them in water submerged for about 3 days with one water change every day. Later you will see them sprout with a cream color stem poking through. Then you take them out and plant them in your garden pot and in a couple of weeks you will have your first sprouting durian trees.
