Roasted Almond Spinach Salad with Avocado, Strawberries & Sweet Pineapple Banana Ginger Sauce

This delicious vegan salad and sauce combination is sure to become a family favorite. It  not only tastes great, it also offers a world of health benefits. In addition to being gluten free, it combines both raw and cooked ingredients which include items which are anti-inflammatory, anti-cancer, high in vitamin E, zinc, vitamin A and calcium, and healthy fats which are good for the skin and hair.  Featuring strawberries, which are abundant during the summer, this recipe also works wonderfully with added cranberries, mandarin orange slices and/or apple pieces.


4 cups of baby spinach
3/4 cup almonds
1/4 teaspoon of hinalayan salt
1 banana
1/2 a small pineapple
2 tablespoons of amino acids (such as Braggs)
1 avocado
1 thumb size piece of ginger
1 cup strawberries
1/2 cup peas

(As always, The Best Years in Life recommends choosing organic content and fresh content as much as possible for the healthiest recipe. Also, wash all fruits and vegetables before cutting or adding to the recipe.)



1. Preheat the oven too 400 F (204 Celsius). Put the almonds on an oven tray, sprinkle with salt and roast for 10 minutes or until golden brown and crunchy! Remove from the oven and make the rest of the salad.

2. Place the baby spinach on 2 plates.

3. Cut up the strawberries and avocado into slices and place on the spinach.

4. Make the sauce, in a blender mix the banana, pineapple (skin removed), ginger (peeled) and the amino acids. Pour the sauce over the salads.

5. Sprinkle with peas. Chop the almonds into smaller pieces and sprinkle them over the salad.

6. Enjoy!

Suggestions: Try this recipe with added cranberries, mandarin orange slices and/or apple pieces in place of the strawberries.
