Sweet Sticky Chicken Wings

Here is a delicious healthy recipe for chicken wings that is sure to have you and your guests coming back for seconds (and thirds and . . .). The combination of apricot jam, ginger and honey along with a healthy soy sauce* (or soy sauce substitute), garlic, a wee bit of vinegar and more makes the recipe irresistibly sweet and slightly tangy - and you can give the recipe an extra bit of kick with some cayenne pepper or hot sauce. This recipe would also be good to use on other chicken pieces, such as thighs. Be sure to make plenty - you'll need it!

Ingredients:

1/2 cup soy sauce*
1/2 cup honey, preferably raw organic honey
1/2 cup apricot jam
2 tbsp extra virgin olive oil (or other healthy oil)
1 tsp vinegar
2 garlic cloves, chopped
1/2 teaspoon ground ginger
4 lbs. chicken wings & drumettes
Optional: Add a pinch of cayenne pepper powder or a splash or two of Louisiana Hot Sauce or other favorite hot sauce for a bit of added "kick".

*Note: The vast majority of soy in the world is genetically modified (GMO). In addition, only fermented soy is healthy. Be sure to use only soy sauce which is made with fermented non-GMO soy or else use one of these healthier soy substitutes:

(As always, The Best Years in Life recommends choosing organic content and fresh content as much as possible for the healthiest recipe. Also, wash all fruits and vegetables before cutting or adding to the recipe.)

Instructions

1. In a medium saucepan, whisk together soy sauce (or soy substitute), honey, jam, oil, vinegar, garlic, and ginger (and the cayenne pepper or Louisiana if desired). Bring the mixture to a boil, then lower heat and let gently simmer for 10 minutes, stirring frequently.

2. Preheat oven to 375 degrees F.

3. Place chicken wings, split, into a 9- by 13-inch baking dish. Pour the soy sauce mixture over the chicken wings and toss gently until all of the wings are coated.

4. Bake until the chicken is cooked through and the skin on the wings begins to darken, turning the wings occasionally, about 1 hour.

5. Serve.

Makes 2 servings.
