Tomato Bruschetta

Chopped tomato, onion, basil and garlic are combined and spooned on thin French bread slices (or better still, make your own healthier bread with one of the suggested recipes), spread with olive oil and toasted.

Ingredients

3 ripe medium sized tomatoes
1 small onion
2 Tbs fresh basil leaves, chopped or 2 teaspoons dried basil leaves, crushed
1 garlic clove, pressed
¼ tsp Himalayan or sea salt
¼ tsp coarsely ground black pepper
24 slices French bread, cut ¼" thick *
2 Tbsp extra virgin olive oil

Instructions

1. Preheat oven to 375F. Cut tomatoes in half; squeeze out seeds. Chop tomatoes and onion. Transfer to bowl using a scraper. Add basil to tomato mixture. Add garlic, salt and pepper; mix gently.

2. Place bread slices on a baking stone or cookie sheet. Lightly brush surface of bread with olive oil. Bake 10-12 minutes or until lightly browned and crisp. Remove bread from oven; scoop tomato mixture onto toast slices, and serve immediately.

Makes 24 servings
