Tomato and Cabbage Soup

Here is a hearty, tasty and healthy tomato soup recipe which can be made with fresh tomatoes, cabbage and carrots or else you can used canned and bagged ones (fresh are best of course). Loaded with healthy ingredients, including garlic, you can also add a bit of cayenne pepper to spice it up if desired.

Ingredients:

1 Tbsp. extra virgin olive oil
1 small onion, chopped
1 clove garlic, minced
8 oz of chopped or shredded fresh cabbage and carrots (or one 8 oz. bag)
14 oz of diced fresh tomatoes (or 14 oz can drained)
1 qt. fat-free, reduced sodium vegetable broth
1/2 tsp. cumin
1 Tbsp. lemon juice
1 tsp. honey
Sea salt and freshly ground black pepper, to taste
Cayenne pepper, to taste (optional)
Instructions

1. In soup pot or Dutch oven, heat oil over medium heat. Add onion and sauté until onion begins to brown lightly, about 5 minutes, stirring frequently.

2. Add garlic and continue to sauté another minute. Add cabbage, carrots and tomatoes. Sauté 3 minutes.

3. Add broth and cumin. Bring to boil. Reduce heat to low. Cover and simmer 10 minutes.

4. Stir in lemon juice and honey. Season to taste with salt, black pepper and cayenne pepper, if using.

Makes 6 servings.

Per serving: 74 calories, 2 g total fat (<1 g saturated fat), 13 g carbohydrates, 2 g protein, 2 g dietary fiber, 607 mg sodium.
