Winter Kale and Cauliflower Salad

Maybe one of your resolutions this year is to branch out and include more variety in your diet! If so than this recipe by Erin Bosdet of Simply Dish may have come at the perfect moment. If you've yet to find a way to enjoy cauliflower or kale in their raw form we urge you to try this recipe! We love the combination of crunchy cauliflower, chewy kale, flax oil with its pleasant nutty flavor and juicy-sweet pomegranate arils that burst in the mouth with each delicious bite. Fresh garlic and cilantro both add a nice touch of extra flavor. Top with a sprinkling of raw pistachio nuts or flax seeds and enjoy! You'll be surprised how addictive this salad actually is.

Ingredients

1 head cauliflower
1 bunch Kale
seeds of 1/2 a pomegranate
1/4 cup flax oil
1/2 cup cilantro
1-2 cloves of garlic
optional garnish - 1 handful pistachios or flax seeds

(As always, The Best Years in Life recommends choosing organic content and fresh content as much as possible for the healthiest recipe. Also, wash all fruits and vegetables before cutting or adding to the recipe.)

  

Directions:

1. Finely chop one head of cauliflower and one bunch of kale. Toss into a bowl.

2. Add the seeds of half a pomegranate. Set aside.

3. Place 1/4c of flax seed oil, 1/2c of cilantro and 1 or 2 cloves of garlic into your food processor and process until combined.

4. Pour the dressing over your chopped veggies, mix well and enjoy!

5. Top with a few pistachios or flax seeds if you like.

Serves 3-4
